Personal experience, Walnut has better spin times when fresh, but looses response over time. Maple seems to maintain a snappier response over the life of the throw with a consistent spin time IMO.
Thank you for the added details. I feel like play consistency should be the deciding factor. If it loses response before the axle breaks you may wanna change it anyway. I’m also certain that maple dowels are not hard… to find. 
Fixed axle Friday and it’s G Wiz time. Aka that delrin no jive compatible. Just got the protos in today!
