A good chefs knife. (I’m always open to giving advise and recommending a good knife of any kind at most price points)

I have a full set of well-loved cast iron pans, and the rest are stainless steel. It took me a minute to unlock the secrets of using cast iron, but I can now cook potatoes and eggs in a cast iron skillet without them sticking
What would you reccomend as a cheap knife set?
I’ll stay away from the obvious. Some of the underestimated tools I use regularly are
Stainless Mixing Bowl & Whisk - We’re Big on pancakes
A few cutting boards - gotta separate the meat and fruits people
Rice cooker - yes any fool can cook rice, but to able too cook the rice without taking up stove real estate and knowing it’ll stay hot without burning is a real help
A well stocked spice rack - because salt and pepper alone won’t win Master Chef
I do all of the cooking, and I kicked butt at single man life so I learned how to impress a woman and feed myself on a budget. The thing that takes the most effort is getting the timing right so that everything gets served hot.
I’ve got a favorite old spatula, like from the late 1980’s. It’s just a fairly cheap Bonny USA with white plastic handle, metal neck and smallish rounded rectangle business end, slotted and red. We have become one. Sure, I can use another spatula, but this one is just the right size for getting into tight spaces and under little pancakes etc. It’s firm, so I can scrape with it or cut something that’s too big a piece in the pan. I don’t like to start a meal without it, but reluctantly will. “Dang, where’s the red one?”
A good thermometer.
I’m partial to my Thermapen
You could hire me as your privet chef just saying
Define me a budget and I’ll build an appropriate set, as most out there come with way too much crap you don’t need. And any must haves like shears?
Uhh, idk 40 bucks? Don’t laugh
Ok give me like half an hour it’s going to be essentials ok? But it’s going to be good knives that if well taken care of will last.
No rush, thanks man!
Cast irons for sure
Good knives
Metal Cake tester for meats
Gas stove

Cast iron frying pan and grill top
Roasting pan and crock pot
A good frying pan and my favorite spatula for breakfast
A good, sharp chef’s knife
A couple of old school Old Hickory , high carbon so they take a little work to keep up. But You can pass them down for years.
You can buy them brand new still if I’m not mistaken. Definitely can’t beat 1095 carbon steel!
Smkw.com has them.
