There is a local place that does deep fried pork boudin and pepper jack cheese egg rolls.
The texture, flavors, and ingenuity of the dish almost perfectly describes my areas food.
Just so you know one of my Ax throwing names I use is “The Axe Man of New Orleans”

I’ve never really dabbled much with low and slow. Those look killer btw! Smoking meats ain’t no joke man! but I did get to do a 7# ribeye roast a couple weeks ago! Oh and I use a wood burning grill at my restaurant.
Used to love me a good stout. Now I drink ales.
