Okay, this just bugs me.

I think you may be confused between the difference between a dialect and a language. French, Spanish, Italian etc. are all distinct languages that descended from Latin, which itself is a language. What actually defines a language is debatable but all of those mentioned are widely considered seperate languages and not simply Latin dialects.
