Which is better and what are they better at? speed? Grinds? anything ?

Both are fine yoyos.

Why limit yourself to YYF exclusively?

Their both great yoyos for everything you listed, just choose what looks best to you.

Grinds on a Severe aren’t exactly amazing due to the gloss.

I prefer the genesis because of it’s beast play for 5a
